Mexican CHEESE Rolls






This was a favorite of mine in school back when they made a real school lunch. This is a variation of the recipe that my family loves!

Dough...

1pk active dry yeast
1/2 c warm water
1/2 c warm milk
1/2 butter softened
1/3 c honey
1 egg
3/4 t salt
4 to 5 cup AP flour (or bread flour)

Filling

1lb cooked ground turkey (can use beef)
2c shredded Mexican cheese (sharp cheddar or pepper jack can be used)
1c salsa (use your favorite)
cook meat. add cheese and salsa set aside

dissolve yest in warm water in large mixing bowl. add milk butter sugar egg and salt. add 2 cups of flour. beat on med. speed for about 2 min.
stir in enough remaining flour to foam a soft dough.
turn on floured surface and knead until smoother and elastic. about 8 min. place in greased bowl turn grease side up. cover and let rise. about 1 hour.

Punch down dough. form ball of dough in hands about the size of palm. Place with filling. fold up sides and pinch ends closed. place seam side down on cookie sheet or other baking sheet.
place in oven as it is preheating. bake until golden brown.
serve with sour cream and salsa.

mint o' treats!


So you cant go wrong with this one. loaded with marshmallows,rice crisps, oreoes and well dah mints!!! best rice crispy treats ever!

1 package LARGE marshmallows
6 cups rice crispies
3T butter
2 cups crushed oreos cookies (DOUBLE STUFFED ARE AMAZING)
1/4 C andies chocolate mint chips (found in baking isle)

In 4qt pan melt butter add marshmallows. when all melted add rice crispies and oreos. stir until well blended together.
press in 9x13 pan. top warm mixture with mint chips they will melt and oozze into the cookie.
let cool cut and ENJOY!

stuffed SHELLS

These are so super yummy you will love them! Serve them up with some Mariana sauce or eat them as they are(i love mine with Mariana)

1 box large shells(i use the largest seashell shaped ones)
1lb mozzarella cheese shredded
16oz cottage cheese
2c raw spinach chopped

cook noodles as directed on box....let cool
meanwhile mix your cheese, cottage cheese,and chopped spinach with some salt and pepper....
stuff into shell. Top with your fav marinara sauce and bake for 15 to 20 min at 350..YUMMY

Ham and ChEEsE calsonE!

2 tbsp mayo(i love love love the olive oil one)
2 tsp dijon mustard
1 c fresh broccoli
8 oz smoked ham
1 small onion
8 oz Swiss cheese (grated and divided)
1 tbsp olive oil
2 pkg. pizza crust (or fresh pizza crust)
1 oz Parmesan cheese (grated)
2 c cooked and chopped seasoned potatoes

PREHEAT OVEN 425

combine mayo and mustard. add chopped broccoli,diced ham,potatoes, chopped onions and half the swiss cheese.
unroll and press out pizza crust. sprinkle with remaining swiss cheese leaving a inch on all four sides..
spoon mixture onto crust. place second pizza crust over and press down sides. brush with oil and bake 15 min.top with Parmesan cheese and cook for 3 min. cut and serve!!

BEST ever OATMEAL cookies

1/2 C butter softened
1/2c shortening
1c brown sugar
1/2c sugar
2 eggs
1t vanilla
1t almond
1 1/2 c flour
1t baking soda
1t cinnamon
1/2 ground cloves
1/2 t salt
3c oats
1c dried cranberries

preheat oven to 350

cream butter,shortening and sugars...add eggs one at a time add in your vanilla and almond extract.....
combine ALL your dry ingredients MINUS your oats and berries!!!
Mix into SUGAR mixture
stir in oats BY HAND WITH BAMBOO SPOON
stir in berries YES BY HAND AGAIN WITH BAMBOO SPOON

drop by rounded spoon full to STONEWARE!!!
bake for 10 to 12 min (if using stones to cook remove right AWAY)
if using a metal pan or other pan let cool one min then remove to cooling rack!!

Laundry SOAP!!

4c HOT h2o
1 bar Zote soap
1c WASHING soda (NOT baking)
1/2c borax

NEED TO MAKE!!!
5 GALLON BUCKET WITH LID
CHEESE GRATER
2 QUART SAUCE PAN
WOODEN SPOON
OLD LAUNDRY JUG

****your zote soap,washing soda, and borax can all be found in your laundry isle!!***

^^^remember you can use all your normal kitchen ware items its just soap will now hurt any of them^^^^^

Grate soap and add to sauce pan (2quart) with HOT h2o..MELT!!

fill bucket 1/2 full with HOT h2o(i warm it up on stove in a stock pot till almost a boil)
add soda,borax stir until powders dissolve. Add melted soap mixture. Fill to top with HOT tap h2o..



Once soap has cooled (24 to 36hrs) you can transfer to your old jug...will be very gel like...fill half way and add water to the other half!! NOW you can add your essential oils!! LOVE the clean linen smell,lavender,sweet pea, or YES pomegranate there is also a sandal wood that smells good to its your choice!!

***REMEMBER TO SHAKE BEFORE EACH USE!!******

Top load washers use one cap full form your old jug! will get you 180 loads of LAUNDRY
Front load washers use 1/4 Cup will get you 640 loads of LAUNDRY

YES..I SAID IT FABRIC SOFTNER!!!
okay as a mother of 5 and a wife of a Marine I wash cloths all the time. and when I say ALL I mean ALL the time!
I make my own laundry soap and fabric softner and save tuns of money!! It is super easy and you can creat your own smells for both of them with oils!!

1c baking soda
7c H2O
6c Distilled vinegar
10-20 drops of essential oil (I LOVE pomigranett or lavender)

stir baking soda and ONE CUP water until dissolved.
SLOWLY add vinegar let FIZZ for a few min(one to two)...add 6 cups of water and stir SLOWLY....now add your oils i love to use 20 drops just for a super sweet smell!!!
Pour into a container...(I cheat and reuse my old one) gentlay shake and use on all your laundry!!!(love love love it for bedding)

Creamy Cheesie broccli soup!!!




2 heads of broccoli
15 oz chicken broth
5c milk
1/2 block Velveeta cheese
1/2lb smokey bacon
2 carrots
1 medium onion
palm full of parsley
half palm of basil
2T flour
salt and pepper to taste

chop broccoli, use the upper section of the greens, discard the lower part OR chop fine. chop carrots into small bite size pieces. Chop onion and bacon

saute bacon
set aside on paper towel to drain grease.
keep grease in pan. saute onions in grease until tender....add flour this will clump up...add salt and pepper KEEP STIRRING...
Add chicken broth and whisk away!!!
In large stock pot add broccoli carrots spices and bacon along with the chicken mixture! simmer to allow the veggies to soften up a bit..(i like mine a little crisp) when tender to your liking add chopped up cheese and slowly add milk. stir until cheese is melted and heated threw. Enjoy!!!

Indian Taco





AHHHH SOOOO YUMMY!!!!!

Bread......
4c ap flour
2T baking powder
2t salt
2c milk
4 to 8 c fry oil (i use peanut)

stir all dry ingredients. Add milk, knead dough until smooth...REST FOR 5 MIN...

Shape into disk with a small indent in center.
place in HOT OIL...(365)
cook on both side until golden brown...

Topping.....
1lbs....ground turkey
2c......black beans(cooked)
2T......pampered chef southwestern seasoning (or taco seasoning)

Options....
tomatoes
lettus
olives
cheese
salsa
sour cream or plain yogurt

cook turkey add beans and season mix with 1/4 cup H2O.
serve over top of fryed bread. top with toppings.

Puckerup Lemon Bars



heat oven to 375

crust...
1c flour
1/3c REAL butter
1/4 powder sugar

cut butter and sugar into flour until crumbly...press in 8x8 pan.
bake for 15 min.

topping...
1c sugar
2 eggs
2T flour
6T FRESH lemon juice
1/2t lemon extract
1/2t baking powder
1/4t salt

mix sugar,egg,flour,lemon juice and extract,baking powder and salt. mix until frothy looking, pour over hot crust.
bake for 20 min or until edges are golden brown.
cool completely when cooled dust with powdered sugar.

peanutbutter brownies......




heat oven to 375

1c peanut butter
1/3 c butter softened
2/3/ sugar
1/2c brown sugar
2 eggs
1/2t vanilla
1c flour
1t baking flour
1/4t salt
1c peanut butter chips or chocolat chips

cream butter and peanut butter..gradually add sugars egg and vanilla until fluffy.
combine flour, baking power and salt....stir in butter mixture until well blended stir in chips.
pour in 9x9 greased pan. bake for 30 to 35 min or until top springs back. cool and cut.

BiScUiTs



heat oven to 400

2c flour
4t baking powder
1/4t baking soda
3/4 salt
4T butter
1c butter milk(add 2T viniger or lemon juice to milk. let set for 10 min)

combine dry ingredients.
cut in butter, mix in milk.....this will be very sticky. knead 5 time.( i do the whole process by hand...)

grab about a palm full of dough and shape into biscuit shape. place on baking sheet.(i use my stones for even cooking)....
bake in oven for about 15 min or until golden brown...brush with melted butter!!

Cheese Cake



YUMMOLISHES!!!! (iam copy writting my word..LOL)

PREHEAT OVEN 325

1c Graham cracker crumbs
1c vanilla waffer crumbs
1/2t cinnamon
1 stick melted butter

2 8oz block cream cheese softened(better with the name brand stuff)
3 eggs
1c sugar
1 pint sour cream
2t real vanilla

for crust...
add cinnamon to crumbs mix in melted butter. press in spring foam pan and bake for 10 min.
let cool and place in fridge for the time you make the cream mixture...

for cheese cake.....
mix cream cheese until smooth. add eggs one at a time, gradually add sugar and beat until creamy.. about 2 mins.
add sour cream and vanilla

pour over crust. wrap foil around spring foam pan. place in roasting pan filled with boiling water(should go 1/2 way up sides of pan)

bake for 45 min or until just starting to crack on top
cool for 30 min
place in fridge for at least 4 hrs.
slice and serve...
great with fresh strawberries or drizzled with chocolate!!!

Peanut Butter crispy bars


1pkg large marshmallow
2T butter
1/2c peanut butter
6 to 8c rice crispy

melt butter, add marshmallows and peanut butter, when all melted add cereal. I use 7 cups for our family preference..
Top with Natala..let cool and slice..

English Muffins


Here is a great one for english muffins....

1 cup milk
2 tablespoons white sugar
1pkg. active dry yeast
1 cup warm water
1/4 cup shortening
1tsp. salt

warm the milk in saucepan until it bubbles. remove form heat mix in sugar until dissolved. add shortening until melted. let cool to luke warm..
dissolve yeast in warm water until creamy..(about 10 min)

combine milk and 3 cup flour to yeast mixture...beat until smooth. add salt and reaming flour...or enough flour to make dough soft. knead and place in greased bowl, cover and let rise until doubled.

punch down, roll out about 1/2 in thick our 1/4 in thick (to double up for each splitting) cut with large biscuit cutter or cup(i use a thermos lid) sprinkle cookie sheets with corn meal. place cut dough on sheet. cover and let rise 1/2 hour.

heat greased griddle. cook muffins for about 10 min on each side, or until golden brown on each side. keep cooked muffins warm in the oven at 200, allow to cool and place in a plastic storage bag...

Super Simple Chocolate Cake!!!



1 pkg German's sweet chocolate
1/2 c water
2 c flour
1tsp. baking soda
1/4tsp. salt
1 c butter softened
2c sugar
4 eggs separated
1tsp. vanilla
1c butter milk

melt chocolate and water in double boiler. stir constantly. set aside

mix flour, baking soda and salt. set aside. beat butter and sugar in large bowl ith electric mixer until light and fluffy. add egg yolks one at a time. stir in chocolate mixture and vanilla. add flour mixture alternating butter milk. beating until well blended.
beat egg whites until stiff peaks form.
GENTLY fold into cake batter.
pour into 9x13 pan or into 3 round 9 in pans.
Bake at 350 for 30 min. cool 15 min and remove form pan.

YUMMY!!!

Frosting

1 can evaporated milk
1 1/2 c sugar
3/4 cup butter
4 egg yolks slighty beaten
1 1/2tsp. vanilla
1pkg coconut
1 1/2 cup pecans chopped

mix milk,sugar,butter egg yolks and vanilla in large sauce pan. cook over med. heat for about 12 min or until thickened and gold in color. stir constantly.
remove form heat.
ADD coconut and pecans mix well.
COOL to room temp. and then frost Cake!!
