These are super Yummy, I altered this recipe to my families taste form my good ol' Betty Crocker cookbook...
1 1/2 c COLD water
1 c flour
1/2 c cornmeal
1/3 t salt
1 egg
heat a 8in skillet over med heat. I use non stick and add a little drizzle of oil to pan.
beat water and egg. Add remaining ingredients and mix well.
pour batter by 1/4c at a time into pan. IMMEDIATELY rotate pan to coat with mixture.sprinkle with salt or chili powder for a kick!! cook for about 2 min and flip,cook for another 2 min.
remove and place on plate to cook, you can stack your shells. This will make SOFT corn shells.
NOW FOR HARD CORN SHELLS....
heat oil in 3qt pan about and inch of oil in pan....slide shell in oil and fold in half with a pair of tongs or forks. turn occasionally until golden brown or until your crispness is meet.

POPcorn Chicken
This is a simple twist on what you buy in the frozen food section at your store, and much better for you and so simple to make.
My kids love this it is one of there favorite chicken dinner and i don't feel guilty feeding it to them.
3 chicken breasts
1 c corn flakes crushed
1 c cheese nibs crackers crushed
1 c Italian bread crumbs
3 eggs beaten
salt and pepper to taste
cut chicken into bite size pieces. crush flakes and crackers. add to a pie pan with your bread crumbs and whisk together. in another pie pan whisk eggs with a table spoon of water.
coat cut chicken in egg wash.(best is you do a few pieces at a time)
then toss them into the crumb mixture.
lay on a baking sheet. (i use stones) and bake for 15 min or until temp. reaches 160 internally.
remove and serve up with your favorite dipping sauces!!

NoT YOUR Mommas' Roast beef SammiE
3 to 5lb roast
1/2 c pineapple juice
1/4 c olive oil
2 T brown sugar
2 cloves CRUSHED garlic
2 tsp mustard
1/4 c soy sauce
1/4 c cider vinegar
1/2 tsp ginger
salt and pepper to taste
(you will also need rolls about 8 to 10,A1 sauce,mushrooms,onion,monteray cheese,milk and butter for later on)
sprinkle roast with salt and pepper on all sides.
whisk remaining ingredients together in small bowl.
place roast fat side UP in crock pot. pour half mixture over roast. cook on high for 1hr. reduce to low and cook for 4 to 6 hours or until temp reaches 160... when done remove roast and let rest for 20 min. slice very thin place back into crock pot full of juice all remaining mixture!
NOW TO SERVE!! (sorry these are not pictured ingredients)
1lb sliced mushrooms
1 small onion thinly sliced
saute together in olive oil!
1/2lb shredded monetary jack cheese
3T butter
1/4 c milk
in sauce pan add all three ingredients. whisk until cheese is melted..
Place slice roast on top of your favorite Roll...top with A1 sauce, mushroom and onion mixture and cheese sauce!! use remaing juice to dip your Sammie in!

so Easy and simple to use only 6 ingredients. I can not take all the credit on this one. It is adapted form a wonderful sister in law. I only changed the sauce and only because my kids like there veggies! You can use hunts traditional sauce if you would like. Thanks Melonie for a super YUMMY dinner!
1jar or chunky vegetable garden pasta sauce
1 box lasagna noodles UNCOOKED
1c cottage cheese
1lb shredded mozzarella cheese
1 can olives sliced
1lb cooked ground turkey (can use beef or chicken)
cook meat. add half the sauce to meat.
in 9x9 pan layer your ingredients...starting with PLAIN sauce,noodles,cheese,then meat cottage cheese and half the mozzarella cheese,noodles,olives cottage cheese and sauce...does not really matter how you do it just make sure your top layer is all cheese..
BAKE FOR 1HR AT 375...NOODLES WILL COOK IN THE SAUCE!

sorry no pics it was just way to good and gone before i got the camera out but this is a super easy soup anyone can make it!
2lg white potatoes chopped into bite size
8oz smoked ham (i use left over but you can buy it pre chopped in the breakfast meat section of your store)
1 small onion chopped
1 large carrot chopped bite size
1 can cream mushroom soup
2 cans chicken broth (or homemade if on hand you'll want about 4cups)
1/2 sour cream
salt,pepper and parsley
In stock pot add a drizzle of olive oil(pour twice around pan) and 2T REAL butter...
add potatoes and cook turning and stirring constantly...(like your frying them) cook until just tender..add onions and carrots and half of the broth let simmer for about 2 to 3 min...
whisk sour cream, mushroom soup and reaming broth..add to potatoes and add ham! cook until potatoes and carrots are to your tender liking POUR a HEAPING scoop into a bowl and top with shredded extra sharp cheese!! YUMOLISHES!

Pick One
Okay blog addicts. yes i called you addicts. Starting this week i will post my menu for the week. so each week i will have my menu up and yes keep in mind i am a mother of 5 so YES hot dogs and mac and cheese is a meal sometimes.
i will post the recipe to one maybe two meals form the week but it all depends on you the bloggers. the meal or food item that gets the most comments will be the one i blog about.
thank you all for looking and yes i will randomly post items also.

C Zer Pasta Salad
This is a great twist on your Italian pasta salad! Note I did forget to put a few ingredients in the picture SORRY!
1pkg. Crazy noodles (any twist noodle will work)
1can black olives
1/2lb Colby cheese
1c peperoni
1lg cucumber
1bunch broccoli
1pkg grape tomatoes
1bottle Ceaser Salad dressing
cook noodles according to package. drain and rinse in cold water.
chop veggies,cheese and pepperoni into bite size pieces.
add to large bowl. toss with noodles and dressing. let set in fridge for 20 min. and enjoy!!

Stuffed Peppers with wild rice and acorn squash!
All I can say is yum! After looking at my dinner menu for tonight I went off track. Sloppy Joes just didn't sound good even thought I have a killer recipe...(that one will come soon)...looking in my fridge I saw I had 3 beautiful green peppers just waiting to be eaten and in our house they are like candy yes my kids are that strange they eat vegetables! I am such a proud Momma! Anyways I found all the great and yummy things to stuff and shove into these gorgeous peppers and serve them with so here you go. ENJOY!
1lb ground turkey (can use ground beef)
3 large green peppers
2 hand fulls of Italian bread crumbs
1/2 c cottage cheese
1/2 c feda cheese
1 15oz can stewed tomatoes
salt,pepper to taste
1tsp basil
1/2tsp oregano
mix seasonings, turkey, cheeses and bread crumbs until blended. stuff into peppers and top with tomatoes.
bake at 375 four 45 to 55 min or until meat is cooked threw!
Serve up with Wild Rice and Acorn Squash...
Acorn Squash...
1 acorn squash sliced in half
place 1/2c water in bottom of baking dish. sprinkle squash with sea salt pepper and drizzle with honey. cook squash in 375 over for 30 min or until desired softness.

hahaha I cheated on this one. I use rice a Ronni...oops but i added a few onions and garlic to it!!

wHITe RockY rOAd
So you know those days were you just want to curl up and enjoy a warm bubble bath with a bowl of rocky road and a great book? but then you find that the bath is taken over by your husband in the shower and you have already polished off the last bit of rocky road so you have to settle on the sofa with the famous snuggie and a lame tv show you have seen over and over again........well that's how my night went last night and well to my surprise i was out of my ice cream but i compromised and made my own and yes no pictures i ended up polishing off the bowl before i could even think of taking one.
WHITE ROCKY ROAD!
1c chocolate chips
1c nuts (i used almonds and walnuts)
1c mini marshmallows
butter
3 scoops vanilla ice cream (heck use four who's counting?)
melt chocolate chips in microwave. stirring form time to time. Add nuts to melted chips and mix. set a side.
melt marshmallows with a little butter (i didn't measure the butter but who cares its melted with marshmallows for Pete sake!)
scoop ice cream into bowl. drizzle with marshmallows. cover with nuts and whip cream!!
HELLO YUMMY!

diNNer 2nite!
Yummy ToMaToE soup with crusty french bread!
(this soup is adapt id form Picky Palate)
BREAD
1 1/2 c warm water
1 1/2 t salt
4 c bread flour
2 1/4 t yeast
dissolve yeast in warm water. add remaining ingredients. mix well with wooden spoon or mixer with dough attachment.
cover and let rise until doubled. FOLD down (do not punch)
separate dough into two equal parts. shape into logs (french bread shape) make small slits on top of each loaf. place on a stone that is sprinkled with corn meal. cover and let rise until doubled.
Bake in PREHEATED over 375 until golden brown or sounds hollow when tapped on. Brush with melted butter or olive oil. Cut and serve!
SOUP
1 20oz can of spaghetti sauce
1 15 oz can diced tomatoes (i used garlic basil flavored ones)
2 c half and half
1 small onion
1 lb sweet Italian sausage
brown sausage,when almost done add chopped onion mix well. add your tomatoes and sauce. stir and slowly add your half and half. heat until warm. SERVE AND ENJOY!

Banana Coconut Cream CAKE!
Super Yummy cake topped with toasted coconuts and almonds! cant go wrong with this one.
Sorry no pic of this one. Lost it someplace and cant find it which means i more than likely deleted it off my camera...hahaha
1 white box cake mix
plus ingredients to make the cake
16 oz heavy whipping cream (can use cool whip but home made is so much better)
1tsp coconut extract (vanilla is fine if that's all you have don't run to the store on extract run if you don't need to)
2T powder sugar
2 c coconut
1/2 c whole almonds
1 box banana pudding
plus milk to make pudding
make cake as directed on box. fill into two round cake pans and bake as directed.
prepare pudding as directed for NORMAL pudding. set aside in FRIDGE until cake is cooled.
chop almonds and toast with coconut. set aside.
whip heavy whipping cream on high with extract and powder sugar until stiff peaks form. set aside in fridge.
place cake on serving platter. gently fold in 1/2 cup whip cream. spread 1/2 mixture on one cake (top half) place the other cake on top of the cake. top the cake with the reaming pudding mixture. spread the reaming whip cream on sides and pipe some along the top edge (this will look pretty but help hold the almonds and coconut in)
in center of pudding mixture sprinkle with your coconut and almond mixture.
ENJOY!!
