taco PIZZA



okay so every Friday at our house is PIZZA night and we do pizza. this is on of our favs.

crust
1 pkg yeast
1 c warm water
1t honey
1 t salt
2T olive oil
2 1/2 c flour

dissolve yeast in water, let rest 10 min. add remaining ingredients and mix well. let set for 5 min.

roll our into a round pizza crust to your liking of thickness for crust. bake at 350 for 15 min.

PIZZA
1/2 lbs COOKED ground turkey
1 can (15oz) black beans drained and rinsed)
1 pkg cherry tomatoes sliced in half
chopped lettuce
ranch dressing
1t chili powder
2T cumin
1 lbs Mexican style cheese


Add chili power and cumin to meat and beans and half of the cheese mix well and top onto pizza crust. bake at 350 for 10 min.
remove form oven and let cool for 10 min. top with lettuce and tomatoes, then add ranch and cheese.......ENJOY.........also yummy with black olives and sliced onions!

oreo brownie sOndAys


Okay I LOVE me some brownies and oreos so lets smash them together with ice cream!!
Now on a normal day I would make brownies form scratch, but lets face it we all don't have time for that so on crazy busy days here is what gets my chocolate fix.....


okay super easy.......
1 box brownie mix plus ingredients to make them (admit it we all have them on hand)
Mix according to package directions
1 bag mini oreos
press into pan with brownie mix
bake according to package directions.......

NOW for the YUMMY part....
Cool slightly and them cut into that yummness and place in a bowl with vanilla ice cream and top with Carmel syrup........YUM, I told you it was super easy!

bread bowls and potato soup




okay this was just yummy and oooooohhhhh so good, i have to say...

Bread bowls
1 1/4 cup warm water
3 tsp yeast
2 T honey
2 T oil
2 c white flour
1 c whole wheat flour
1 1/2 tsp salt
1/3 c flax seed
1/4 c wheat germ
3 tsp wheat gluten
1/3 c sunflower seeds

dissolve yeast in warm water and honey. let set for 10 min..
add remaining ingredients in order.
kneed and let rise until doubled.
Once doubled punch down and form into balls. place on baking sheet. cover and let rise again until doubled.
Bake in oven at 375 until golden brown or for 25 min.
when thumped on will sound hollow.
let cool on rack...when cool slice off top and hollow out, leaving some on bottom to hold soup.... brush with olive oil and add soup!!!

Loaded baked potato soup


4 lg white potatoes chopped into bite size
1/2 lbs pound cooked bacon, chopped
1 small onion chopped
1 large carrot chopped bite size
1 can cream mushroom soup
2 cans chicken broth (or homemade if on hand you'll want about 4cups)
1/2 sour cream
1/2 c jalapeno Cheddar cheese dip (found in chip isle)
salt,pepper and parsley

In stock pot add a drizzle of olive oil(pour twice around pan) and 2T REAL butter...
add potatoes and cook turning and stirring constantly...(like your frying them) cook until just tender..add onions and carrots and half of the broth let simmer for about 2 to 3 min...
whisk sour cream, cheese, mushroom soup and reaming broth..add to potatoes and add bacon! cook until potatoes and carrots are to your tender liking POUR a HEAPING scoop into a bowl and top with shredded extra sharp cheese!! YUMOLISHES!

milky way cake



okay so here is the run down on a form what I heard a yummy cake!! I made this birthday cake for a friends friend so I didn't get to try it, I know the frosting was good...LOL...

here's the run down....
1 box white cake plus ingredients to make cake
1 c chocolate syrup
1/3 c coco powder
1 tsp vanilla

6 to 8 fun size milky ways ( plus or minus a few to eat as you use them..lol)

mix cake according to package ingredients. add syrup, coco and vanilla. divide into two round cake pans.
chop milky ways into bite size pieces and press into each cake, make sure not to go all the way to the bottom of the pan..they can pop out on top!!!
bake at 350 for 20 min or until tooth pick comes out clean after pricked in center of cake.
remove and let cool on cooling rake.

FROSTING
1/2 c BUTTER (non of that fake stuff use REAL BUTTER)
1/2 c coco powder
4 c powder sugar
1/2 c butter milk (to make it you can add 1T lemon juice to milk and let set for 10 min)

melt butter add coco powder and beat, add powder sugar and milk alternating between the two...mix to consistency you like for frosting cake...

Frost cake when cooled!!!

green EGGS and PEACH empanadas


Okay well its not really green eggs but that's what my kiddos call it. We do breakfast for dinner every Sunday and this was one that they ate right up!

green eggs

9 eggs
2 heads broccoli
2 c sharp cheddar cheese (shredded)
1 c cooked chopped ham
salt pepper to taste
dash of milk
Okay ya'll know how to scramble and egg right............crack your eggs in a bowl, add milk, salt and pepper and whisk.
pour into a baking dish. I used a 9x9. No add the WASHED CHOPPED BROCCOLI, ham and HALF the cheese.
Bake at 350 for 20 min our until toothpick comes out clean...Top with remaining cheese

Peach empanadas

2 pkgs. cresent rolls
4 lrg. peaches
cinnamon

wash and slice peaches into fourths. Roll each slice into ONE crescent roll and sprinkle with cinnamon.
Bake at 375 for 15 min or until golden brown.
drizzle with frosting if you would like
FROSTING.....
powder sugar and water and a splash of vanilla mix to consistency you prefer

mIxed nUt GRANOLA


DON'T FALL OVER YA'LL I'M POSTING A NEW RECIPE!!!
I LOVE granola and so does my family. Here is one of our favorite ones.

4 C old fashion oats
1/4 c wheat germ
1/4 c flax seed
1/2 c sunflower seeds
1 c mixed nuts
1 1/2 c golden raisins
1 c shredded coconut
2 tsp cinnamon
4 T REAL maple syrup (not the cheap breakfast pancake stuff, go for PURE maple)
4 T canola oil

Add all ingredients in a large bowl. Stir well to incorporate all ingredients.
Spread an even layer on stone baking sheet or metal cookie sheet. Bake at 350 for 15 to 20 min (until golden brown)
STIR EVERY 7 TO 10 MINUTES
Let cool on cooling rack in sheet......Store in air tight container.
Enjoy over yogurt, ice cream or as a cereal!!

Bread Sticks




Who doesn't like a warm bread stick with a bowl of soup or a big ol plate of pasta!!
I love these it is a fight in our house for the last one....so much that I have to triple the batch half the time.
Hope ya'll enjoy.

1 1/2 c. warm (105-115 degrees) water
1 Tbsp. sugar
1 Tbsp. yeast
1/2 tsp. salt
3-4 1/2 c. flour
1 c mashed potatoes (cooked)

Dissolve yeast and sugar in water until bubbly. about 10 min.
add salt, flour and potatoes. mix until ball forms. Turn down and knead until smooth.
place in greased bowl cover and let rise until doubled.
punch down dough.
roll dough on to floured surface about 1/2 inch thick.
with pizza cutter but into strips. roll out into snake form...(you know just like you did with play dough when you were little...lol)
fold in half and twist...works great to loop around your finger to twist.
place on greased cookie sheet. bake until golden brown at 375...brush with butter and garlic and parsley!
